Savoury Sized.

Savoury muffins, in bite sized flavour bombs...you just can’t stop at one!

Whether you take three delicate bites or down the lot, one will not be enough.

These little beauties are packed with ingredients that fuel the body nicely. Made from whole, unbleached flour and my own-made baking powder (this means no aluminum’s or clumping agents) and “butter milk”, helps make the combined ingredients sing.

Packed with feta, semi dried tomato, shredded tasty cheese, sautéed; pumpkin, onion, red capsicum, spinach and basil. Free range eggs combine the whole lot and is finished off with sesame seeds.

300 of these babies were tucked away into mini muffin cases, before dusting with a little sesame seeds then baked in batches of 72 at 200°C for 25 minutes and removed to cool on wire racks.

I used a small sized ice cream scoop to fill each case, dipping it in a little oil from time to time to free the batter. Even so, it was a delicate procedure getting them cleanly into place in preparation for baking.

Eating them was by far the best part! They came out light and bread like, and the cheeses gave them a moist, density that’s broken up by the sautéed vegetables.

This is a great snack for brunch, lunch and afternoon teas, that’s packed with nutritional energy helping you through the day.

I know they’ll be enjoyed by those who’ll be eating them. A group of dedicated leaders and volunteers at this year’s 2019 HillSong Conference. These champions will be busy looking after and entertaining children of all ages attending the conference. A big job that requires constant supervision. So yes, these mini muffin’s of energy will be greatly enjoyed :)
